White Adriatic fig cut open showing red flesh

Cut a ripe White Adriatic open and the contrast is startling: pale green skin around flesh the colour of strawberry jam. The flavour lives up to it, with a berry brightness and acidity that most figs lack.

That acidity is what makes it such a good jam fig. Cooked down, the colour holds and the flavour stays lively instead of turning flat and sugary. It has long been grown in California for drying and for fig paste.

Origin

Italy; widely planted in California from the late nineteenth century.
