Our dark jam comes mostly from Chicago Hardy figs, cooked with their skins so the colour and the slight tartness of the skin end up in the jar. It is the jam that stands up to strong cheese, cured meat and roast pork.
We cook it in small pans, a few pounds of fruit at a time, so the fruit keeps its texture.
