Kadota is the American name for the old Italian variety Dottato. The fruit stays yellow-green when ripe, the skin is thick, and the flesh is amber with few seeds and a gentle honey sweetness.

It is one of the varieties historically grown for canning and preserving, partly because the thick skin holds up to cooking. For a pale, honey-toned white fig jam it is a natural choice.

Origin

Italy, where it is known as Dottato; long established in California.
