This site started as a place to keep our own notes: which trees ripened when, how much sugar went into which batch, what worked. It is growing into something we hope other people find useful: a reference on figs and fig jam that is honest about what we know from experience and what we have looked up.
A few things to say plainly at the start.
- Most of the photographs are still to be taken. Where you see a coloured panel with a caption, that is where a photograph of ours will go.
- Recipes marked as sample recipes have not yet been cooked and measured by us. They will be, and the mark will come off when they have.
- Anything to do with food safety points to tested sources rather than to us. See the food-safety page.
- We are not selling jam yet. The shop pages show what we make so you know what is coming.
More soon, as the figs allow.
